Cobblemon has no trade evolution. Every Pokemon that would need a trade in the main games evolves when you use a Link Cable on it instead, so you never need a second player. If the trade normally requires a held item, give the Pokemon that item first, then use the Link Cable.

How to do it in Cobblemon

Link Cables are crafted from Link Cable fragments, which drop from Pokemon and turn up in loot.
Held item first, cable second. Rhydon holding a Protector plus a Link Cable becomes Rhyperior.
Servers with player trading still evolve these on a real trade too, but the cable is the reliable route.

A held Everstone blocks every evolution method, and a server level cap stops level-based evolution until you beat the next gym. You can also cancel when the evolution prompt appears.
